Spanish Omelette

  1. Place potato in a large microwave-safe bowl and cook on HIGH (100%) for 6-7 minutes until just tender.
  2. Whisk together the eggs, paprika and seasonings.
  3. Heat the oil in a 26cm frying pan over medium heat.
  4. Add the onion and saute.
  5. Add 1/2 the potato, capsicum and parsley to the pan and pour over 1/2 the egg mixture.
  6. Top with the Singles*, then the remaining potato, capsicum and parsley.
  7. Pour over remaining egg mixture.
  8. Cook, uncovered, over medium-low heat for 8-10 minutes or until base of omelette is browned and filling is almost set.
  9. Place pan under a hot grill for 5-8 minutes until top is set.
  10. Slice and serve with rocket and tomatoes.
