Blueberry Bran Sunflower Muffins Recipe
- 1 stk unsalted butter melted and cooled (1/2 c.)
- 1/2 c. lowfat milk
- 2 lrg Large eggs beaten lightly
- 1 1/2 c. all-purpose flour
- 3/4 c. sugar
- 2 tsp double-acting baking pwdr
- 1/4 tsp salt
- 1/2 c. miller's bran*
- 3/4 c. hulled raw sunflower seeds * toasted lightly
- 1 1/2 c. blueberries picked over
- *Available at natural foods stores, specialty foods shops, and some supermarkets
- In a bowl stir together the butter, the lowfat milk, and the Large eggs.
- In a large bowl whisk together the flour, the sugar, the baking pwdr, the salt, the
- bran, and the sunflower seeds.
- Add in the butter mix, stir the batter till it is just combined, and mix in the blueberries.
- (The batter will be thick and lumpy.)
- Divide the batter among 12 well-buttered 1/2-c. muffin tins and bake the muffins in a preheated 425F.
- oven for 20 to 25 min, or possibly till they are golden brown.
- Turn the muffins out onto a rack and let them cold.
- Makes 12 muffins.
