Purple Sweet Potato Baked Cheesecake

  1. Steam the sweet potato and lightly mash with a fork.
  2. Crush the biscuits in a food processor, and mix with butter melted in the microwave.
  3. Spread and pack in the bottom of the cake mould and chill in the fridge.
  4. Put the cooled sweet potato, heavy cream, eggs and granulated sugar in the food processor and blend it all together.
  5. Add the cream cheese softened in the microwave, the flour and lemon juice and give it a mix.
  6. Pour into the mould and bake for 45 minutes at 170C.
