Tomato Cheese Bake Recipe
- 1 (7 ounce.) pkg. favorite macaroni, cooked and liquid removed
- 1 1/2 c. lowfat milk
- 1 c. grated Parmesan cheese
- 1/2 c. minced onion
- 1 clove garlic, crushed
- 3 Large eggs, beaten
- Salt
- Grnd pepper
- 1/2 pound Mozzarella cheese, cut into strips
- 2 tomatoes, sliced
- 2 c. bread crumbs
- 2 tbsp. melted butter
- Fresh parsley
- Heat oven to 350 degrees.
- Combine macaroni, lowfat milk, half of the Parmesan cheese, onion, Large eggs, and seasonings.
- Mix well; stir in Mozzarella cheese and pour half in a greased 2 qt casserole.
- Top with one tomato sliced, then remaining macaroni mix.
- Toss crumbs with butter.
- Arrange remaining tomato on top and sprinkle with crumbs.
- Sprinkle with 1/2 c. Parmesan cheese and bake for 20 min.
- Serve warm, garnished with parsley.
- Serves 6-8.
