3 Pea Fried Rice Recipe
- 1 Tbsp. Chopped garlic
- 1 Tbsp. Chopped ginger
- 4 c. Cooked long grain rice, usually day old
- 3 x Large eggs scrambled
- 2 Tbsp. Chive batons
- 1 c. Blanched English peas
- Salt and pepper to taste
- 1 c. Blanched snow peas
- 1 c. Blanched snap peas
- 1 x Lemon, Juice of
- 1 x Lime, Juice of
- 1 x Orange, Juice of
- 1/4 c. Extra virgin extra virgin olive oil
- Salt and black pepper to taste
- In a wok, coat with canola oil and add in garlic and ginger.
- Cook till soft and add in rice.
- Mix well then add in Large eggs, chives and English peas.
- Heat thoroughly.
- Check for seasoning Toss snow and snap peas with vinaigrette.
- Check for seasoning.
- CITRUS VINAIGRETTE:Juice of 1 lemon Juice of 1 lime Juice of 1 orange 1/4 c. extra virgin extra virgin olive oil Salt and black pepper to taste
- Mix all ingredients well.
- Yield: 4 servings
