Fruit and Almond Melange with Raspberry Vinaigrette
- 2-1/2 qt. KRAFT FREE Raspberry Vinaigrette Fat Free Dressing
- 2 Tbsp. poppy seed
- 1 gal. sliced almonds
- 1/4 cup sugar
- 9-1/2 gal. torn mixed salad greens
- 50 scoops cottage cheese (#10 scoop)
- 6-1/4 qt. cantaloupe, cut into chunks
- 6-1/4 qt. honeydew melon, cut into chunks
- 6-1/4 qt. strawberries
- 3 qt. red grapes, halved
- Mix dressing and poppy seed; cover.
- Refrigerate until ready to use.
- Toss almonds with sugar in skillet; cook on mendium-high heat until lightly caramelized, stirring constantly.
- Remove from heat.
- For each serving: Place 3 cups salad greens in carry-out salad container.
- Top with 1 scoop cottage cheese, 1/2 cup cantaloupe, 1/2 cup honeydew, 4 strawberries, 1/4 cup grapes and 2 Tbsp.
- almonds.
- Place 3 Tbsp.
- of the dressing mixture in portion cup; cover with lid.
- Place cup in salad container; close container lid.
- Refrigerate until ready to serve.
