Pan seared cod with homemade chorizo
- 2 cod fillets
- 2 tbsp olive oil
- 1 tsp salt
- 1/4 tsp white pepper
- 1 lb hot italian sausage, ground
- 1 bunch flat parsley, chopped
- 1/4 cup cider vinegar
- 1 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tbsp paprika
- 1/4 tsp red pepper
- 1 tsp cumin
- 1/2 tsp corriander, ground
- 2 clove garlic, minced
- 6 cherry tomatoes, halved
- 2 tsp olive oil
- Mix all chorizo ingredients in a bowl.
- Heat pan on medium.
- Cook sausage.
- Then remove from pan.
- Turn heat up medium high.
- Season both sides of fish.
- Add oil to pan (if needed).
- Add fish to pan.
- Flip fish after 2 minutes.
- Cook for another two minutes.
- Remove fish and let rest.
- Coat tomatoes with oil.
- Add tomatoes to pan and turn heat down to medium low.
- Cook for 1 mintue.
