Pan seared cod with homemade chorizo

  1. Mix all chorizo ingredients in a bowl.
  2. Heat pan on medium.
  3. Cook sausage.
  4. Then remove from pan.
  5. Turn heat up medium high.
  6. Season both sides of fish.
  7. Add oil to pan (if needed).
  8. Add fish to pan.
  9. Flip fish after 2 minutes.
  10. Cook for another two minutes.
  11. Remove fish and let rest.
  12. Coat tomatoes with oil.
  13. Add tomatoes to pan and turn heat down to medium low.
  14. Cook for 1 mintue.
