Pork Chops With Apple Raisin Relish

  1. MAKE THE RELISH: In a medium saucepan, combine the apples, sugar, raisins, vinegar, ginger, and cayenne over medium-high heat until sugar dissolves; about 2 minutes.
  2. Reduce heat; simmer partially covered, until apples have softened, 10 minutes, stirring occasionally.
  3. MAKE THE PORK CHOPS: Season chops with salt and pepper.
  4. In a large skillet, heat the oil over medium-high heat.
  5. Add the pork chops, and cook until browned, 3-4 minutes per side.
  6. Serve with apple raisin relish on the side.
