Cilantro Black Bean Balsamic Based Salsa
- 1 (14 1/2 ounce) can black beans, drained and rinsed
- 1 (11 ounce) can white shoepeg corn, drained
- 12 yellow bell pepper, chopped
- 12 red bell pepper, chopped
- 12 green bell pepper, chopped
- 1 bunch green onion, chopped (white part and some green)
- 12 cup fresh cilantro, chopped
- 14 teaspoon coriander (or more to taste)
- 12 cup parsley, chopped
- 2 tablespoons olive oil
- 4 tablespoons balsamic vinegar
- salt, Pepper, Cayenne Pepper or Tabasco sauce
- I make the day before an event.
- It is refreshing :) with the balsamic base.
- I have put over chicken as well -- and one time I set it out at BBQ and some people scooped it up like a salad and they loved it :).
