Spicy Lentil-Potato Stew
- 1/2 cup lentils
- 1 cup carrots chopped
- 1/2 cup celery leaves
- 1 tablespoon chili powder
- 1/2 teaspoon basil dried
- 2 cups tomato juice
- 2 med. potatoes
- 1/4 cup celery chopped
- 3 each garlic cloves
- 1 cup onions chopped
- 1/2 teaspoon oregano dried
- 3/4 cup water
- Throw it all in a pot and bring to a boil.
- Cover, reduce heat, and simmer unti; vegies are tender, about 45 minutes.
