Quick and Easy Mini Datemaki (Rolled Fish Omelette)
- 1/2 Hanpen
- 2 Egg
- 1 1/2 tbsp Sugar
- 1 tbsp Mirin
- 1 tbsp Sake
- 1 tsp Soy sauce
- 1 dash Salt
- Make a 'lid' with aluminium foil that fits inside the frying pan you're using.
- Chop up the hanpen in a food processor.
- Add the rest of the ingredients to the food processor and switch on.
- Whiz until completely combined.
- Heat some oil in a frying pan.
- Add the egg-hanpen mixture, and cook over medium-low heat with the aluminium foil on top for about 3 minutes.
- Put a piece of plastic wrap on top of a sushi rolling mat.
- When the omelette is cooked, slice it on top of the plastic wrap.
- Roll tightly.
- Leave to cool slightly, then chill in the refrigerator.
- Finished.
- It's fine if it's a bit browned!
- It will form a nice pattern on the cut surface.
- Use in bentos too.
