Quick and Easy Mini Datemaki (Rolled Fish Omelette)

  1. Make a 'lid' with aluminium foil that fits inside the frying pan you're using.
  2. Chop up the hanpen in a food processor.
  3. Add the rest of the ingredients to the food processor and switch on.
  4. Whiz until completely combined.
  5. Heat some oil in a frying pan.
  6. Add the egg-hanpen mixture, and cook over medium-low heat with the aluminium foil on top for about 3 minutes.
  7. Put a piece of plastic wrap on top of a sushi rolling mat.
  8. When the omelette is cooked, slice it on top of the plastic wrap.
  9. Roll tightly.
  10. Leave to cool slightly, then chill in the refrigerator.
  11. Finished.
  12. It's fine if it's a bit browned!
  13. It will form a nice pattern on the cut surface.
  14. Use in bentos too.
