Second Time Around Vegetable Soup

  1. With a food mill puree the leeks, carrots, and potatoes.
  2. Transfer the puree to a saucepan.
  3. Add enough broth to turn the puree into a souplike consistency and bring to a simmer.
  4. If desired, add heavy cream to taste.
  5. Season with salt and pepper.
  6. Ladle into soup bowls and garnish with snipped chives.
