Chicken in Cilantro Sauce

  1. Place the chicken breasts in a large pot, add water to cover and bring to a boil.
  2. Reduce the heat and cook for 30 minutes.
  3. Drain thoroughly.
  4. Transfer to a serving platter and cover to keep warm.
  5. Meanwhile, combine the cilantro, chilies, evaporated milk and salt and pepper in a blender.
  6. Blend thoroughly for 2 to 3 minutes.
  7. Heat the oil in a medium saucepan over medium heat.
  8. Saute the onion until translucent, 3 to 4 minutes.
  9. Add the cilantro mixture and bring to a simmer.
  10. Reduce the heat to low and simmer gently for 10 minutes.
  11. Pour the sauce over the chicken and serve.
