Cinnamon Banana Loaf
- 200 grams flour
- 1 tsp baking powder
- 1 1/2 tsp bicarbonate of soda
- 1 1/2 tsp salt
- 2 tsp cinnamon powder
- 3 tbsp sugar
- 3 medium bananas
- 2 tsp vanilla extract
- 180 grams Fage 0% Greek Yoghurt
- 2 eggs
- Preheat your oven to 175/Gas Mark 4
- Combine all the dry ingredients into a bowl and set aside.
- In a food processor add your bananas, Greek yoghurt, eggs and vanilla extract.
- Blitz until all combined and pureed together.
- Add the dry ingredients into the food processor and blend until it forms a nice batter.
- Spoon out the batter into a loaf tin and place on the top shelf in the oven for 45 minutes
- Allow to cool before serving.
