Apri-Carrot Bread
- 1 12 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 12 cup brown sugar
- 14 cup orange juice
- 1 tablespoon orange juice
- 2 egg whites
- 1 teaspoon almond extract
- 1 14 cups grated carrots
- 13 cup dried apricot, chopped
- 13 cup chopped walnuts (optional)
- Combine flour, baking powder, baking soda, and brown sugar in large bowl.
- Stir to mix well.
- Add both 1/4 cup and 1 tablespoons orange juice, egg whites, and almond extract, stir until moistened.
- Fold in carrots, apricots, and walnuts (if you choose to use walnuts).
- Evenly spread in greased loaf pan.
- Bake at 350 F for about 45 minutes or until toothpick inserted in center comes out clean.
- During baking, bread might form some opening crevices, allow for some heat ventilation inside bread.
- Cool completely.
- Serve with a spread of peanut butter for some protein.
