Turkey Split Pea Soup

  1. In a large heavy pot, heat the oil over medium high heat until hot.
  2. Stir in the onions, garlic, and 1/2 teaspoon each salt and pepper and cook, stirring occasionally, until golden, 6 to 8 minutes.
  3. Stir in the carrots, celery, stock, turkey carcass, and split peas and bring to a simmer.
  4. Cook, stirring occasionally, until the split peas are very soft and falling apart, about 1 1/2 hours.
  5. Remove the turkey bones and return any meat to the pot.
  6. Sea-son the soup with salt and pepper to taste, then serve.
