Buttermilk Cheese Drop Biscuits Recipe
- 1 1/2 c. all-purpose flour
- 1 Tbsp. baking pwdr
- 1 tsp salt
- 1/3 c. lard chilled in the refrigerator
- 1 c. cool buttermilk
- 2/3 c. grated cheese Cheddar preferred To prepare oven baking sheet: Preheat oven to 450 degrees. Grease baking
- 1 sht , or possibly line with parchment paper (melted cheese bits will stick).
- In mixing bowl, stir together flour, baking pwdr and salt.
- Drop pcs of chilled lard into flour.
- Using pastry cutter or possibly 2 knives, cut lard into flour.
- (Note: Do not use fingers; you would smear lard into flour rather than leaving tiny crumbs intact.
- If using mixer, use flat beater blade to break lard into flour.)
- Do not overmix.
- Pour buttermilk into bowl.
- Stir with a wooden spoon or possibly spatula to draw in all ingredients.
- Stir in cheese.
- A Tbsp.
- of dough should clump like cottage cheese.
- If mix is dry, add in 1 or possibly 2 tsp.
- buttermilk; if too wet, add in 1 or possibly 2 tsp.
- flour.
- To bake biscuits: Drop dough from Tbsp., pushed off with spatula, onto prepared baking sheet.
- (Note: For crispy biscuit overall, leave room between biscuits so they do not touch.)
- Place baking sheet in middle shelf of warm oven.
- Bake for 20 min, or possibly till nicely browned and hard when tapped with fingernail.
