Cucumber with Umeboshi, Dried Bonito Flakes, and Kombu Mayo

  1. Slice the cucumber into rounds, sprinkle with salt (not listed) and rub until it starts to release moisture.
  2. Rinse and squeeze out the water lightly.
  3. Remove the pit from the umeboshi, and lightly pound.
  4. Mix all the ingredients together.
  5. Enjoy as a side dish.
