Mecan Mash
- 3 -5 tablespoons butter
- 1 (12 ounce) can Spam
- 1 medium onion
- 2 (15 ounce) cansslide potatoes
- 6 -8 slices monterey jack pepper cheese
- salt and pepper
- Open cans of potatoes and set by the fire to warm the potatoes.
- Leave lids on as handles to later remove from the fire.
- Slice Spam into strips 3/8" x 1 1/2".
- Fry in butter in heavy fry pan until dark brown crust on all sides.
- Set aside, do not drain butter.
- Fry onions until caramalized and brown.
- Set aside.
- Add butter to pan, drain liquids from potatoes, "pat dry" as possible.
- Fry until golden crispy on both sides.
- Add Spam and onions back into fry pan and cover with cheese.
- Return covered fry pan to fire to melt the cheese into the layers.
- Remove from fire and serve.
- Serve with a spicy Bloody Mary, cold Lennies Creamy Dark Beer or smooth Merlot wine.
