Mecan Mash

  1. Open cans of potatoes and set by the fire to warm the potatoes.
  2. Leave lids on as handles to later remove from the fire.
  3. Slice Spam into strips 3/8" x 1 1/2".
  4. Fry in butter in heavy fry pan until dark brown crust on all sides.
  5. Set aside, do not drain butter.
  6. Fry onions until caramalized and brown.
  7. Set aside.
  8. Add butter to pan, drain liquids from potatoes, "pat dry" as possible.
  9. Fry until golden crispy on both sides.
  10. Add Spam and onions back into fry pan and cover with cheese.
  11. Return covered fry pan to fire to melt the cheese into the layers.
  12. Remove from fire and serve.
  13. Serve with a spicy Bloody Mary, cold Lennies Creamy Dark Beer or smooth Merlot wine.
  14. Enjoy!
