Clam-Vegetable Stuffing
- 1 1/2 c. chopped, unpeeled zucchini
- 3 c. bread cubes, toasted (4 slices bread)
- 1 (6 1/2 oz.) can clams, drained or 1 (8 oz.) can oysters, drained and chopped
- 1/3 c. chicken broth
- 1/2 tsp. dried basil, crushed
- 1 1/2 c. thinly sliced carrot
- 1 1/2 c. sliced fresh mushrooms
- 1 beaten egg
- 1/4 tsp. ground sage
- Cook zucchini and carrot, covered, in boiling salted water 3 minutes or until crisp-tender.
- Drain.
- Toss with bread cubes, mushrooms and clams or oysters.
- Combine chicken broth, egg and herbs.
- Pour over stuffing mixture.
- Toss until moistened.
- For a moister stuffing, add more broth.
- Turn into a 2-quart casserole. Bake, covered, at 350u0b0 for 40 minutes or until stuffing is heated through.
- Serves 12, 60 calories per 1/2 cup.
