Collard Green Soup
- 10 oz. fresh
- frozen chopped collards
- 1 pkg. mushrooms, sliced
- 3 carrots, sliced
- 1 can cooked black beans
- 2 cans chicken stock
- 1 can diced tomatoes with jalapenos
- 1 cup cooked rice
- 1 onion, chopped
- Red pepper flakes, to taste
- 1 ham hock
- Add chicken stock to large soup pot, turn heat to medium-high.
- Add ham hock, and collards.
- Add mushrooms, onions and carrots soup.
- Cook until collards are soft.
- Add tomatoes, black beans, rice and pepper flakes to taste.
- Take out ham hock and chop meat, add to soup and serve.
