Collard Green Soup

  1. Add chicken stock to large soup pot, turn heat to medium-high.
  2. Add ham hock, and collards.
  3. Add mushrooms, onions and carrots soup.
  4. Cook until collards are soft.
  5. Add tomatoes, black beans, rice and pepper flakes to taste.
  6. Take out ham hock and chop meat, add to soup and serve.
