tacos de pescado (fish tacos)
- 6 tilapia filets cut in half length wise
- 6 eggs beaten
- 2 packages saltine crackers processed in a food processor until powder consistancy
- using a frying pan or deep fryer dip each fish filet in egg then dredge in cracker crumb then fry until golden brown on both sides about 6 minutes in total cook time
- serve in heated corn tortillas with blended salsa of your choice, shredded lettuce, diced tomato and cilantro.
