Apple And Sausage Stuffing Recipe
- Nonstick cooking spray
- 1 lb Sweet Italian turkey or possibly pork sausage casing removed
- 2 Tbsp. Butter
- 1 lrg Onion minced
- 4 x ribs Celery diced
- 2 x Granny Smith or possibly Delicious apples cored and minced
- 2 x Garlic cloves chopped
- 2 tsp Poultry seasoning - (to 3 tspns)
- 12 c. Cubed country-style stuffing mix (or possibly 12 c. multigrain bread cubes from a 24 ounce loaf dry overnight)
- 2 c. Low sodium chicken broth (or possibly more) Salt Grnd black pepper
- Coat a large skillet with cooking spray.
- Brown sausage till cooked through.
- Remove sausage from heat; transfer to a large mixing bowl.
- Crumble sausage.
- Heat butter in the skillet; saute/fry onion for 2 to 3 min, till translucent/soft.
- Add in celery, apples, garlic and poultry seasoning; cook for 3 to 5 min, stirring often.
- Add in apple-vegetable mix and stuffing mix or possibly bread to bowl of sausage; mix well.
- Moisten with chicken broth; season with salt and pepper.
- Let cold completely before stuffing the turkey.
- Yield: 20 c..
- Note: Stuffing can be cooked separately in a large glass casserole dish, but more stock may be needed to replace the moisture which usually comes from the turkey cavity.
