Barbie Beach Dessert

  1. Mix 2 cups of the crushed wafers and butter in 13x9-inch baking dish.
  2. Press firmly onto bottom of dish.
  3. Refrigerate until ready to use.
  4. Beat cream cheese and sugar in medium bowl until well blended.
  5. Add 1/2 of the whipped topping; mix well.
  6. Spread evenly over crust.
  7. Stir boiling water into gelatin in medium bowl at least 2 minutes until completely dissolved.
  8. Add enough ice to cold water to measure 2 cups.
  9. Stir into gelatin.
  10. Refrigerate 5 minutes or until gelatin is slightly thickened.
  11. Spoon over cream cheese layer.
  12. Refrigerate 3 hours or until firm.
  13. Just before serving, spread remaining whipped topping over gelatin.
  14. Sprinkle with remaining 1/4 cup crushed wafers.
  15. Decorate as desired with candy and paper umbrellas.
  16. Cut into squares.
  17. Store leftover dessert in refrigerator.
