Arugula Tomato and Olive Salad
- 1 garlic clove, minced
- 12 teaspoon salt
- 14 teaspoon pepper
- 2 teaspoons chopped fresh oregano
- 3 tablespoons red wine vinegar
- 13 cup olive oil
- 2 large ripe tomatoes
- 8 ounces arugula
- 12 cup oil-cured black olive
- In large bowl, combine dressing ingredients.
- Whisk with a fork to blend.
- Cut each tomato into 8 wedges.
- Toss tomatoes, arugula, olive and onion together with the dressing.
