French Cafe Brulot

  1. Place the sugar, orange rind and vanilla pod in a heatproof bowl and bruise the rind with a wooden spoon.
  2. Pour the brandy into a small saucepan, then place over low heat until heated through.
  3. Pour over the sugar mixture, then ignite and stir constantly for 30 seconds.
  4. Extinguish the flames with the hot coffee, then remove the orange rind and vanilla pod.
  5. Serve in coffee cups.
  6. Do not serve with cream or additional sugar.
  7. This makes about 20 demitasse cups.
