French Cafe Brulot
- 3 tbsp. sugar
- 1 sm. orange
- 1 vanilla pod
- 1 tsp. pure vanilla extract
- 1-1/2 cup brandy
- 6 cups piping hot black coffee
- Place the sugar, orange rind and vanilla pod in a heatproof bowl and bruise the rind with a wooden spoon.
- Pour the brandy into a small saucepan, then place over low heat until heated through.
- Pour over the sugar mixture, then ignite and stir constantly for 30 seconds.
- Extinguish the flames with the hot coffee, then remove the orange rind and vanilla pod.
- Serve in coffee cups.
- Do not serve with cream or additional sugar.
- This makes about 20 demitasse cups.
