Pumpkin Canelloni

  1. Preheat oven to 350.
  2. Cook shells as directed.
  3. Mix the ricotta, half the mozzarella, the pumpkin, parmesan, egg yolks and nutmeg.
  4. Spoon into shells.
  5. Pour a small amount of sauce in bottom of pan.
  6. Top with stuffed shells.
  7. Cover with remainder of sauce, top with rest of mozzarella.
  8. Cover with foil and bake 25 minutes.
