Deluxe Cheese Cake(In Honor Of Myrtle Mcklyo)
- 1 1/2 c. graham cracker crumbs
- 1/3 c. melted butter
- 1 (17 oz.) can fruit cocktail (save syrup)
- 1 (3 oz.) pkg. lemon jello
- 1/2 tsp. salt
- 1 pt. cottage cheese
- 1 c. whipping cream (1/2 pt.)
- 1 tsp. vanilla
- Drain fruit cocktail; save syrup.
- Save 1/2 cup of the fruit cocktail for garnish.
- Heat 1 cup syrup and dissolve lemon jello and salt in it.
- Cook until slightly thickened.
- Force cottage cheese through a sieve.
- Whip whipping cream.
- Fold in fruit, cottage cheese, whipped cream and vanilla into the jello in the jello mixture.
- Turn into crumb-lined spring-form pan and chill until firm.
- Decorate top with crumbs and the 1/2 cup of drained fruit cocktail.
