Pineapple Cake

  1. Mix together all ingredients except crushed pineapple.
  2. Beat at medium speed for 2 minutes.
  3. Fold in crushed pineapple.
  4. Bake at 350 degrees in 2- 9 inch layer pans for 33 to 38 minutes.
  5. Frost with your favorite cream cheese icing.
  6. Sprinkle top with coconut or toasted coconut.
