Easy Chicken Casserole Recipe
- 8 single chicken breasts
- 2 pkg. (16 ounce. each) frzn broccoli
- 2 cans cream of chicken soup
- 1/2 c. mayonnaise (Kraft Miracle Whip can be used)
- 1/3 c. evaporated lowfat milk
- 1 teaspoon lemon juice
- 1/2 teaspoon curry pwdr
- 1 c. grated sharp Cheddar cheese
- Bread crumbs and melted butter
- Cook chicken in large pot of water.
- Can use microwave if you prefer.
- Cold.
- Remove chicken from bone.
- Cut into bite size pcs or possibly cubes.
- Layer in 9 x 13 inch pan that has been sprayed with cooking spray.
- Cook broccoli till tender.
- Drain and layer over chicken.
- Combine chicken soup, mayonnaise, lowfat milk and lemon juice, curry pwdr, blending till smooth sauce.
- Pour over broccoli.
- Sprinkle cheese over sauce.
- Toss bread crumbs with melted butter.
- Put on top of cheese.
- Bake at 350 degrees for 30 min.
- Serve 12.
- Can be cut in half to serve 6.
- Use 8 x 8 inch pan.
- Serve with salad and dinner rolls.
- Makes a nice meal.
