Chris' Chicken

  1. In a large skillet, heat the olive oil and saute the chicken until light brown.
  2. Add the onion, garlic and peppers.
  3. Saute, but do not brown.
  4. Push sauteed vegetables aside.
  5. Add salt as desired. Add uncooked rice and stir among the chickens.
  6. Add the chicken broth, tomato sauce, wine and peas and bring to a boil.
  7. Remove from heat.
  8. Cover and place in a hot oven at 400u0b0.
  9. Bake until dry. Serves 10 to 12.
