Baked Shrimp and Zucchini Pasta
- 1/2 cups Onion, Diced
- 1 Tablespoon Olive Oil
- 1/2 pounds Zucchini, Washed And Sliced
- 2 cloves Garlic, Minced
- Salt And Pepper, to taste
- 1/2 pounds Shrimp, Deveined
- 1 cup Tomato Sauce
- 1 can Diced Tomatoes With Green Chiles
- 1 pound Pasta; Elbow, Farfalle, Or Shells Are Good
- 2 cups Mozzarella Cheese, Shredded
- 1/2 cups Parmesan Cheese, Grated
- Saute onion in olive oil until wilted.
- Add zucchini and garlic, season with salt and pepper and cook for 3 minutes.
- Add shrimp and stir on high for 2 minutes.
- Add tomato sauce and tomatoes; cook all at high for 3 minutes.
- Meanwhile, preheat the oven to 525 F.
- Cook the pasta in a large pot of boiling salted water.
- Drain and toss well with sauce mix until coated.
- Set pasta in a baking dish and top with shredded mozzarella and Parmesan.
- Collect any tomato sauce left in the pots and sprinkle over the top.
- Place the pasta dish in the oven and bake for 10 minutes.
