Beef Vegetable Soup
- 1 large onion, chopped
- 1 tsp. chopped garlic
- 3 large (12 oz.) cans tomatoes
- 3 or 4 large carrots
- 1 can lima beans
- 1 can white Shoepeg corn
- 1 can yellow Niblets corn
- 1 1/2 lb. ground chuck
- 1/4 c. catsup
- 2 Tbsp. Worcestershire
- Louisiana hot sauce
- basil
- 1/4 c. alphabet macaroni
- In a large pot, saute chopped onion.
- When onion is transparent, add garlic.
- Add chopped tomatoes and cover.
- Bring to simmer.
- Add chopped carrots.
- Add lima beans, Shoepeg corn, yellow Niblets corn, salt and pepper to taste.
- Brown 1 1/2 pounds ground chuck.
- Add to pot.
- Add catsup, Worcestershire sauce, splat of hot sauce, 1 tablespoon basil and 1/4 cup alphabet macaroni.
- Simmer for 1 hour.
- Taste for salt.
