A Special Carrot Cake
- 2 cups sugar
- 4 eggs
- 2 tsp. cinnamon
- 2 tsp. salt
- 1-1/2 cup chopped walnuts
- 1-1/2 cup vegtable oil
- 2-1/4 cup flour
- 2 tsp. baking soda
- 3 cups grated carrots
- 1 pkg. (8 oz.) cream cheese, softened
- 2 tsp. vanilla
- 1/4 cup margarine
- butter, softened
- 1/2 box powdered sugar, sifted
- Cake: Combine oil, eggs, sugar, beat at medium speed for 2 minutes.
- Sift all dry ingredients together.
- Add to egg mixture, beat on low speed for 1 minute.
- Fold in carrots and walnuts.
- Pour into greased and floured 13x9-1/2x2-inch pan.
- Bake for 300F for 1 hour.
- Cool cake completely before frosting.
- Frosting: Blend room temperature cream cheese and butter or margarine.
- Add vanilla.
- Gradually beat in sugar.
- Frost cooled cake.
