A Special Carrot Cake

  1. Cake: Combine oil, eggs, sugar, beat at medium speed for 2 minutes.
  2. Sift all dry ingredients together.
  3. Add to egg mixture, beat on low speed for 1 minute.
  4. Fold in carrots and walnuts.
  5. Pour into greased and floured 13x9-1/2x2-inch pan.
  6. Bake for 300F for 1 hour.
  7. Cool cake completely before frosting.
  8. Frosting: Blend room temperature cream cheese and butter or margarine.
  9. Add vanilla.
  10. Gradually beat in sugar.
  11. Frost cooled cake.
