HEALTHY LIVING Easy Skillet Chicken Stir-Fry
- 1 lb. boneless skinless chicken breasts, cut into thin strips
- 2 cloves garlic, minced
- 1 Tbsp. olive oil
- 1-1/4 cups water
- 1/4 cup lite soy sauce
- 2 tsp. sugar
- 1 pkg. (16 oz.) frozen stir-fry vegetables (broccoli, carrots, red peppers, snow peas)
- 2 cups instant brown rice, uncooked
- 2 Tbsp. chopped PLANTERS Dry Roasted Peanuts
- Cook and stir chicken and garlic in hot oil in large skillet on medium-high heat 5 min.
- or until chicken is done.
- Add water, soy sauce, sugar and vegetables; stir.
- Bring to boil.
- Stir in rice; cover.
- Remove from heat.
- Let stand 5 min.
- Fluff with fork; sprinkle with nuts.
