Apple Salad Delight

  1. Drain pineapple, reserving juice and set pineapple aside.
  2. In a saucepan, combine sugar, flour, vinegar and reserved juice until smooth.
  3. Bring to a boil; cook and stir for 2 minutes or until thickened.
  4. Remove from heat.
  5. Stir a small amount of hot mixture into egg; return all to the pan; stirring constantly.
  6. Bring to a gentle boil; cook and stir for 2 minutes.
  7. Remove from heat and cool.
  8. Fold in cool whip.
  9. Fold in apples and pineapple.
  10. Cover and refrigerate for 1 hour.
  11. Just before serving fold in the peanuts.
