Taboule Salad
- 1 (5 1/4 ounce) package Near East taboule wheat salad
- 1 cup boiling water
- 2 -3 tablespoons olive oil
- 1 large tomatoes, chopped
- 14 cup fresh basil, chopped
- 12 bunch fresh parsley, chopped
- 12 red onions or 12 white onion, diced
- 12 teaspoon minced garlic
- 2 tablespoons fresh lemon juice
- salt and pepper, to taste
- romaine lettuce leaf, if desired
- In large bowl, combine wheat salad mix and contents of Spice Sack.
- Stir in 1 cup boiling water and oil.
- Let stand 30 minutes.
- Stir in fresh basil, fresh parsley, onion, garlic, lemon juice, and salt (if desired).
- Fold in tomatoes.
- Cover; chill for at least 2 hours or overnight before serving.
- Serve as a side dish, a light lunch, or on a bed of romaine lettuce.
- Sprinke with freshly ground pepper, if desired.
