Spinach and Carrot Soup
- 4 large carrots, peeled and cut
- 2 large potatoes, peeled and cut (add 1 more if you like the soup creamier)
- 1 large onion, chopped
- 3/4 tsp salt
- 3 garlic cloves, peeled
- 100 ml olive oil, extra virgin
- 300 grams spinach
- Add to a deep pot the water, approximately half way up the pot, garlic potatoes, carrots, salt and olive oil and bring to the boil.
- Cook for 25-30 minutes until the vegetables are cooked.
- When cooked blend all into a fine creamy mixture.
- You may want to add more water at this point if its too thick.
- Continue to cook over a medium heat for a further 5-10 minutes until its boiling.
- Add the spinach and continue to boil for a further 5 minutes or until spinach is cooked.
- Check seasoning is to your liking.
- Rest for 10-15 minutes and serve.
