Chewy Coconut-Raisin Squares

  1. Preheat oven to 350F.
  2. Beat butter and powdered sugar in medium bowl with electric mixer on medium speed until light and fluffy.
  3. Add 1 cup flour and 2/3 cup of the coconut; mix well.
  4. Press firmly onto bottom of ungreased 9-inch square pan.
  5. Bake 20 min.
  6. or until golden brown.
  7. Meanwhile, beat eggs and vanilla in large bowl with electric mixer on medium speed until well blended.
  8. Gradually add brown sugar, beating well after each addition.
  9. Add 2 Tbsp.
  10. flour and the baking powder; mix well.
  11. Stir in raisins and 1 cup of the remaining coconut.
  12. Pour over crust.
  13. Bake an additional 30 min.
  14. Sprinkle with the chopped chocolate.
  15. Cover with foil; let stand 2 to 3 min.
  16. or until chocolate is melted.
  17. Carefully spread chocolate over dessert until evenly covered; sprinkle with the remaining coconut.
  18. Cool completely.
  19. Cut into 16 squares to serve.
