Florentine Bean Soup
- 4 slices bacon, chopped
- 3 garlic cloves, minced
- 1 medium onion, chopped
- 1 (14 ounce) canchopped spinach, drained
- 3 (14 1/2 ounce) cans chicken broth
- 1 (15 ounce) cannellini beans, rinsed and drained
- 1 (15 ounce) red kidney beans, rinsed and drained
- 1 (15 ounce) dark red kidney beans, rinsed and drained
- 12 cup sun-dried tomato, cut into thin strips
- 1 teaspoon dried basil
- shredded parmesan cheese
- Brown bacon over high heat in a large stockpot, about 8 minutes.
- Add garlic, and onion, saute about 6 minutes.
- Add spinach, saute 2 minutes, mixing in browned bits.
- Add beans and all remaining ingredients.
- Simmer 10 minutes.
- Garnish with parmesan if desired.
