Veal And Rice Balls Recipe
- 2 tbsp. each finely minced onion, green bell pepper, and celery
- 2 teaspoon butter
- 1 sm. garlic clove, chopped
- 5 ounce. grnd veal
- 1 ounce. uncooked instant rice
- 1/8 teaspoon oregano leaves
- 1/2 c. each tomato sauce and water
- 1 pkg. instant chicken broth and seasoning mix
- 1/4 teaspoon marjoram leaves
- In 1 qt microwaveable casserole combine onion, bell pepper, celery, butter and garlic; microwave on high (100%) for one minute.
- Add in veal, rice, and oregano and mix well.
- Shape into 8 equal balls.
- In same casserole arrange veal balls and microwave on high for 3 min.
- In 1 c. liquid measure combine remaining ingredients; pour over veal balls.
- Cover with plastic wrap, folding back 1 corner to allow steam to escape, and microwave on medium (50%) for 12 min, turning veal balls over every 3 min.
- Let stand for 2 min.
