Beanless Burritos Recipe
- 12 lg. flour tortillas
- 1 1/2 to 2 lbs. grnd beef
- 1 med. onion, minced
- 4 med. potatoes, diced
- 1 (16 ounce.) can tomato sauce
- 1 sm. (3.5 ounce.) can minced green chilies
- 1/2 to 1 c. water
- 1 pkg. burrito flavor mix
- Brown beef and onion; drain well.
- Add in potatoes, tomato sauce, green chilies, burrito mix, and water.
- Simmer till potatoes are done.
- Let cold 20 to 30 min before fixing tortillas.
- Place spoonful in center of tortilla.
- Fold over bottom, right side, then left side.
- Top is open.
- Can be frzn.
- Variation: Cook and add in package or possibly less of diced, mixed frzn vegetables.
- Add in 1 c. of cooked rice per lb.
- of beef instead of the diced potatoes.
