Tofu Creamed Spinach

  1. Heat butter and olive oil in a large skillet over medium heat.
  2. Stir in onion and garlic; cook until soft and translucent, but not brown.
  3. Add spinach; cook, stirring frequently, until wilted.
  4. Place tofu, milk, cheese, garlic powder, salt, and pepper in a blender, and puree until smooth.
  5. Stir pureed tofu into spinach.
  6. Cook until warmed through.
  7. Adjust seasonings, if desired, and serve.
