Indian Winter Squash Gratin

  1. Preheat oven to 375F.
  2. Cut squash in half, scoop out and discard seeds.
  3. Place cut side down in a baking dish with 1/4 inch water.
  4. Cover and bake about 1 hour.
  5. When finished, let cool slightly, scoop out flesh and cut into 3/4" cubes.
  6. Toss in large bowl with all ingredients except almonds, spread in 6 quart baking dish and sprinkle with almonds.
  7. Bake 30 minutes, until bubbly and thick.
  8. If almonds are getting too dark, lower heat to 325 and bake longer.
