Fried Butternut
- 1 each butternut squash
- 1 teaspoon orange marmalade
- 1/4 teaspoon vanilla extract
- 1 tablespoon butter, unsalted
- 1 teaspoon olive oil
- Boil the butternut for 2 min, this will make the skin soft and easy to peel.
- Peel the butternut and slice into medium cubes or in wheels.
- heat the olive oil in a sauce pan, melt the butter and add the butternut.
- Fry until brown, remove and place on kitchen paper to remove the oil and butter.
- Warm the marmalade for a few seconds in a microwave just enough for it to work with.
- Add the vanilla essence to the marmalade and if you want add 30ml orange liqueur.
- Mix the sauce and pour over the butternut....serve.
