Greek Inspired Veggie Wrap
- 1 large spinach or tomato wrap
- 2 tbsp sundried tomato pesto
- 1 handful of baby arugula
- 8 pitted kalamata olives
- 1 small roma tomato
- 1/4 cucumber
- 2 tbsp feta cheese in chunks
- 1 tsp olive oil
- 1 balsamic vinegar glaze
- 1 dash salt
- 1 dash ground black pepper
- 1 dash garlic powder
- Slice up your vegetables!
- The cucumber slices should be fairly thick; quarter them like a pizza.
- Dice the tomato.
- Slice each kalamata olive in half lengthwise.
- If your feta chunks are very large, I recommend chopping them up smaller.
- Lay out your wrap and spread the pesto out.
- Add all your veggie ingredients and the feta.
- I like to layer it with the arugula first, followed by the cucumber and tomato, olives, and topped with the feta.
- Add the olive oil and other seasonings evenly across the top of your veggie fillings.
- Wrap the whole thing up like a burrito!
- Pull the sides together close but not touching.
- Then life the bottom and tuck like you're wrapping a gift.
- Finally, roll the whole thing together tightly and you've got your yummy finished product!
