Greek Chicken Sandwich Melt
- 4 ounces, weight Boneless Skinless Chicken Breast
- 1/2 whole Lemon, Zest And Juice
- 1/2 teaspoons Black Pepper
- 1/2 teaspoons Oregano
- 1 Tablespoon Olive Oil
- 2 Tablespoons Butter
- 2 slices Your Favorite Bread
- 2 slices Feta Cheese
- On a clean work surface, place chicken breast between two pieces of waxed or parchment paper and pound out thin.
- Add to a mixing bowl with lemon zest and juice, black pepper, and oregano.
- Gently toss and marinate 5 minutes.
- To a grill pan add over medium heat, add olive oil.
- Grill chicken 34 minutes each side or until juices run clear.
- Butter one side of bread and place butter side down on the grill pan.
- Add cooked chicken, sliced feta cheese on top, followed by the second slice of bread.
- Butter the exposed side of bread.
- Cook 3 minutes and flip sandwich, cooking on the remaining buttered side another 3 minutes or until golden brown.
- Cut in half and enjoy!
