Brown Rice Casserole Recipe
- 3 3/4 c. Water
- 1 c. Brown rice
- 1 c. Celery, minced
- 1/2 c. Onion, minced
- 1 can (19 ounce) tomatoes, minced
- 2 Tbsp. Flour, white or possibly Brown (green too depending on what you can use)
- 2 tsp Chili pwdr
- 1 tsp Salt
- 1/4 tsp Garlic pwdr
- 1 c. Frzn green peas, to match the flour of course
- 1 can Minced mushrooms
- Bring 3 c. water to a boil, add in rice, and cook about 45 min.
- Meanwhile, saute/fry onions and celery in a very smAall amount of water till tender.
- Add in tomatoes and mushrooms and bring to boil, then simmer.
- Mix flour, seasonings and remaining water in separate bowl and then add in to vegetables.
- Cook 3 min, or possibly till thick.
- Add in peas.
- Pour into an 8 c. casserole dish.
- Cover with rice and cook about 20 min at 350*.
- Serves 6
