Smoky Beef Salami Recipe

  1. In large bowl, thoroughly mix the grnd beef.
  2. Add in above ingredients.
  3. Cover and refrigeratefor 24 hrs.
  4. Divide mix into fourths.
  5. Shape each into a compact 8 inch log and place each on a 12x18 inch piece of nylon net (buy at fabric store, least expensive with largest holes).
  6. Roll up tightly; tie ends with string.
  7. Place logs on broiler pan with a rack and bake in a 225 degree oven for 4 hrs.
  8. Remove from oven and take off net, pat rolls well with paper towels to absorb excess fat.
  9. Cold slightly, then wrap in foil and refrigerator or possibly freeze.
