Shrimp With Sweet Mango Fiery Sauce
- 2 mangoes, diced
- 1 (7 ounce) can chipotle chiles
- 12 cup diced pineapple
- 14 cup onion
- 1 12 teaspoons minced fresh cilantro
- 1 small bell pepper
- 24 shrimp, shelled and deveined
- 1 garlic clove
- 1 tablespoon fresh basil
- 12 lime
- 1 tablespoon olive oil
- In a medium glass bowl mix the mangoes, pineapple, onion, cilantro and chopped bell pepper with the adobe sauce from the 7 oz can of chipotle.
- When mixed place in blender until pureed.
- Let it set in the frig covered for at least 2 hours.
- Heat 1-2 tablespoons of oil in a skillet.
- Put in the garlic and shrimp, do not burn the garlic.
- Saute for 1-2 minutes.
- Turn the shrimp over and add the basil and juice from the lime.
- Pour the sauce over the shrimp and cook just to heat the sauce.
- Serve.
